Love Linden Stores? Then let out a collective cheer my friends, because I’ve managed to pull a few strings and tease out this recipe from the enduringly clever chef patron, Chris Boustead. And if you haven’t bagged a table yet at one of Cheshire’s most exciting culinary forces, then it’s about time you turned up to this Knutsford heavyweight. Though in the meantime, throw on the apron and get stuck into crafting these Bubble and Squeak croquettes – perfect for canapés or a Christmas Day starter.

Bubble and squeak croquettes Linden Stores

Bubble & Squeak Croquettes

Makes approx 30 Croquettes.

Ingredients:

2kg Maris piper potatoes

1 Large onion

2 Carrots

¼ Savoy cabbage

150g Roasted chestnuts (can buy preprepared from most good supermarkets)

2 Eggs

½ Table spoon of cornflour

Salt and Pepper to taste

100g Plain flour

200g Bread crumbs

Method:

Prick the potatoes all over and roast whole in a preheated oven for 90 mins or until soft at 200C. While roasting, finely dice the onion, wash, top and tail the carrots and roughly grate, remove the core and shred the savoy cabbage and roughly chop the chestnuts.

Fry off the carrots, onion and cabbage in a little oil until soft and slightly caramelised. Use a clean tea towel to squeeze out excess moisture. Set aside.

Once cooked, slice the potatoes in half and push through a fine sieve, then combine with your vegetable mixture, chestnuts, one egg and the cornflour. Add salt and pepper to taste.

Let the mixture cool and roll into approx 40g balls. Cover them first in flour, then the second egg beaten and finally bread crumbs. Set aside until ready to serve.

When ready to serve, fry until golden – suitable for the air fryer, shallow fry or deep frying.

We serve ours with Bovril mayo which you could recreate at home by adding a spoon of bovril to any good mayo!
