<p>When Gary Usher takes over a historic country pub, people really take notice. And the chef and his trialblazing team have truly made their mark on Cheshire&#8217;s pub scene, steering a space that&#8217;s rightfully gained a reputation for superb heartwarming flavours in a down-to-earth, cosy atmosphere. As for their roasts? They&#8217;re the stuff of foodie legend, thanks to top-drawer meat, billowing Yorkies and some of the best gravy around. Top it off with a bottle of plonk by the fireplace, and you’ve got a recipe for&nbsp;<em>the</em>&nbsp;perfect gastropub.&nbsp;</p>

<p>This fallen drinking den was brought back to life by local cattle farmer Didy Morgan in 2016, and the current team are on a high at the moment after being named in the top 500 pubs in the UK by the Telegraph. What&#8217;s all the fuss about? Well, for starters, this crooked former coaching house uses meat from its very own farm, conjuring a menu that shines a light on its rare breed beef, lamb, and pork. Turn up on a Sunday (though always book first) and you&#8217;ll have its 28-day dry-aged beef, orchard-raised black pork with sage stuffing, or Carden Farm Balwen lamb to choose from &#8211; all of which come from the farm just a mile away. Plus a host of comforting sides plucked from the kitchen garden. A true farm-to-fork fixture. </p>

<p>There’s an unpretentious stylishness to this pub over in Tarporley. Same can be said for its decidedly British menu that doesn’t stray too far from pub classics, but where dishes are cooked seriously well with all those smoky flavours you get from a Josper grill. Though the menu truly excels on the day of rest with its renowned Sunday roasts, from rare roast topside of beef to braised lamb shoulder, with the crispiest roast potatoes and all the trimmings. Save room for pud too, hell, the cheese board, for a truly curl-up-and-get-cosy Sunday feast.</p>

<p>Welles and Cross is a stylish neighbourhood joint, spruced up in muted tones, brushed gold accents and a laid-back playlist. The seasonal menu leans modern British with global twists, though roast dinners here are something of a local ritual, all kicked off with just-baked sourdough and whipped butter. And hello bottomless rich pan gravy.  </p>

<p>Diners travel from far and wide to the pinprick village of Marbury to stake out a table at The Swan &#8211; a proper country pub with heaving oak beams, roaring fires, and shelves lined with books to nosey through over a wine or three. As for roasts? Their beef is blushing pink, the Yorkies are the size of small hats, and roasties come with that holy-crisp crunch. Our tip? Book early, bring stretchy trousers, and don’t skip the crumbles.</p>

<p>This newbie from the clever cooks behind Porta pulls off that rare trick: laid-back charm with food that seriously delivers. Sundays here are a roast-lover’s pilgrimage &#8211; from perfectly pink sirloin to golden roasties and rich and deep gravy. All this plus craft ales, gorgeous wine and retro board games. </p>

<p>On weekends, this ivy-clad pub is teeming with locals curling up from the cold after a rosy-cheeked walk. Grab yourself a table beside the fire and order a bloody mary or large red whilst you’re waiting for your roast. My advice? Go for the 28 days-aged Cheshire beef, served sliced with a Yorkshire pud, duck-fat roast potatoes and parsnips cooked in honey. In fact, if you’re from out-of-town, the pub offers its Room and Roast package for £170, which includes a night’s stay in one of its quirky rooms and a Sunday roast. Who’s in?</p>

Sundays here are all about crisp pork crackling, pillowy Yorkshire puds, and sizzling roast potatoes. The vibe? Grown-up but never stuffy, with swift service and just enough muddy boots by the door to keep it real. Bring your appetite &#8211; and make sure someone else is driving for the post-roast nap.</p>

<p>Perched high in the Peckforton Hills with sweeping views over the Cheshire Plain, The Pheasant Inn is a roast destination with serious scenery to match its menu. Sundays here are a celebration of all things hearty: thick cuts of roast beef with a rosy blush, giant Yorkshire puds, and all the trimmings made with precision and buckets of flavour. It’s rustic-chic without trying too hard, filled with flagstone floors, oak beams, and fireside pints. Post-roast strolls along the Sandstone Trail are optional, but frankly, you’ll need one. Just leave room for the treacle tart. </p>
